Pale gold colour, fine mousse. On the nose, floral notes (hawthorn blossom, white apple), citrus, flint. On the palate, finesse, balance, length, taut freshness. Elegant, persistent finish, on a fine salinity. Its signature comes from a natural yeast strain encouraged during fermentation.

An author's cuvée born from a bet on yeast. We encouraged a natural strain, present on the apple skin but rarely allowed to express itself, to lead the fermentation and leave its signature.

Méthode ancestrale, natural mousse formed in bottle, carefully aged by our cellar master. Heirloom varieties from the estate, organic, no added sulfites.

It all started with a 2013 experiment. We let a natural yeast strain, discreet and hard to draw out, take charge of the fermentation. It brings a flavour signature the usual yeasts do not give.

We let this cuvée age for ten years, like a fine wine. The result exceeded our expectations: unexpected, in the very best sense of the word. In 2023, we repeated the experiment.

Delivery is free from €250 of purchases within mainland France. Below that, shipping costs are calculated by parcel weight and shown before payment.

Yes. The estate has been organic since 1967. All our ciders and perries are free of added sulfites, 100% pure juice, made using the traditional method with the cellar's wild yeasts.

Store the bottles lying down, away from light, so the cork stays moist. Each product page states the serving temperature. Age-worthy cuvées, such as Jean-René or Extralucidre, gain complexity after a few years in the cellar.

Payment is made by card via Stripe. The transaction is encrypted and we never store any card data.

Our bottles are certified for reuse. You can bring them back to a collection point in the national network: they are washed, then reused as they are. It's the most effective way to cut a bottle's footprint.
