It comes from our organic ciders, left to acetify naturally. No filtration, no pasteurisation: the mother of vinegar stays in the bottle, visible, a sign that the vinegar is alive.
This haze that floats or settles at the bottom is not a flaw. It is the colony of bacteria that turns the cider's alcohol into acetic acid. A vinegar that keeps all its substance and depth.
Storage: at room temperature, away from light. The vinegar does not go off. The mother may thicken over time, which is normal. Any sediment can be filtered out if you prefer a clear liquid.

In the kitchen
- Vinaigrettes. A bright, fruity acidity that replaces wine vinegar on a salad or raw vegetables.
- Marinades. It tenderises white meat and fish, and flavours lacto-fermented vegetables.
- Deglazing. A dash at the end of cooking lifts a pan sauce, a jus, or a roast.
- Everyday use. Diluted in a glass of water, by the spoonful, as tradition dictates for raw cider vinegar.
Unfiltered, unpasteurised, our vinegar keeps its mother: the haze of bacteria that turned the cider's alcohol into acetic acid. Industrial vinegars, heated and filtered, lose it along the way.
Tradition gives it a place in the morning ritual, a spoonful diluted in a large glass of water. We offer it for what it is: a living food, made from our organic apples, rich in aroma.
Dilute before drinking. Not recommended undiluted, as it is acidic for the stomach and tooth enamel.
