A small, close-knit team
The estate runs on a small team with sharp skills. Thibault on management and sales, Coline in the cellar, Nico in the orchard, Edgard on logistics, and Yann as advisor.
Manager
The son of Claude and Jean-René knows the estate like the back of his hand: he spent his last year of nursery school on the old Deutz tractor. Long aware of the climate stakes, he has made sustainability his driving force. Naturally, he is the one steering the estate's transition to zero carbon.
Cellar master · Oenologist
A trained oenologist, Coline found her favorite playground in the cellar. That's where she is most at ease, at the heart of the fermentations she masters cuvée after cuvée. She follows each tank closely, checks densities, tastes, adjusts. Precise and creative, she is the one who shapes the signature of our ciders.
Orchard · Agroecology
Chilean by birth, Nico looks after the orchard. Passionate about apples and everything that grows, he tends our apple trees through agroecology. Always smiling, with boundless enthusiasm, he is the one who watches over our trees, the old ones and the youngest alike.
Logistics & vinegar workshop
Edgard runs logistics and the vinegar workshop. A solid teammate, he bends over backwards to find the right delivery solution, even when a request comes in at the last minute. With him, we can handle almost anything, including the most urgent orders.
Advisor · Cider oenologist
Yann is our technical advisor. A cidrologist, in other words an oenologist specialized in cider, he has followed the Normandy cider industry for more than twenty years. Former technical director of the IFPC, founder of the Malus & Vitis consultancy, he is invited as a judge at cider competitions around the world. He has known the house for a long time and works hand in hand with the whole team. It's a privilege to have him by our side.
