The context

A credible alternative to wine by the glass.

Wine consumption is declining in France. Fine-dining customers are looking for alternatives: light alcohols, naturally fermented, less expected pairings. Cider ticks the boxes when the profile is dry, structured, without added sugar.

Our draft cuvées are built with that in mind. Fermentation is pushed through (low residual sugar), wild yeasts bring complexity, and the cask finishes widen the range of possible pairings.

On a by-the-glass list, two draft ciders at €6-9 (Extra-brut plus a cask finish) work like a mineral white and a structured white. The margin is comparable to producer-direct wine, with no négociant in between.

Precise food pairings

Five cuvées, five pairing territories.

  • Shellfish, sushi, raw fish, ceviche. Fills a briny, iodine-forward gap where a mineral white wine would otherwise be reached for.

  • Foie gras, sweetbreads, pairing with Calvados-reduced sauces. The cask finish ties the dish and the glass together.

  • Smoked meats, duck charcuterie, aged cheeses (Livarot, Époisses). A smoky argument held without competing with the whisky itself.

  • Rich dishes, game, blue-veined cheeses. A genuine alternative to Belgian beer as a pairing, more terroir, more apple.

  • Vegetable dishes, asparagus, fresh cheeses, fruity desserts. The cuvée that takes the list out of rustic territory.

Serving draft cider in a restaurant isn't done by the pint at the bar. We recommend 25cl tulip glasses, served at 8-10°C, presented at the table like a wine by the glass.

We provide training for floor staff (video call or on site): presenting the cuvées, pairing by dish, pouring on tap without excess foam. Bartenders and head sommeliers pick it up in under an hour.

For the written menu: we send ready-to-use descriptive cards, written in a sommellerie tone. This is included in the trade pack.
