The youngest of our calvados, and the first chapter of the story. Four years in Limousin oak casks, distilled in a copper column still. Pale gold colour, a lively attack, honest apple, white blossom. A calvados that opens like a dream, best served chilled as a digestif or mixed into a cocktail.

Our cellar master distils this Calvados in a copper column still, from a selection of our organic ciders.

The brandy then ages for 4 years in Limousin oak barrels. It colours naturally over the years, with no added colouring.

Nose
Fresh apple, white blossom, yellow fruit, a light touch of vanilla.
Palate
Lively, fresh, fruity, a clean attack.
Finish
Clean, on the apple.

Before he was born, William the Conqueror was foretold by a dream. His mother, Arlette of Falaise, saw a tree grow from her body and its shadow cover the whole of Normandy, then England. This premonitory dream opens the story of our range, of which Le Songe is the first chapter.

This bottle is part of a story: five cuvées that tell the Battle of Val-ès-Dunes (1047) and the rise of William the Conqueror, on the very land of the estate.
