Joël Robuchon loved pairing scallops with pommeau. The pearly flesh of the shellfish and the scent of apple: it’s a very Norman pairing, and an exquisite one. Here is our version, reconstructed from memory at the domaine.

The sauce brings together three expressions of the apple. Dry cider for liveliness, pommeau for fruit and length, cider vinegar for a touch of acidity. The shallots cook down in this mixture, then the butter binds it all together. All that’s left is to sear the scallops and plate.
