The Aperol Spritz has taken over every terrace. The Norman version keeps the idea and changes two things. In place of prosecco, a well-chilled off-dry cider. In place of orange, lemon. The drink becomes lighter and fruitier.

The interest lies in the ABV. An off-dry cider sits around 4.5%, against 11% for prosecco. Since the cider fills two-thirds of the glass, the Norman Spritz comes in much lower in alcohol. You can enjoy it longer, without losing any freshness.

The lemon isn’t there by chance. Its acidity answers the Aperol’s bitterness, where orange simply rounds it out. A few drops of juice are enough to find the balance, and everyone settles on their own. For the cider, we pour our Cuvée Claude: a round off-dry cider, built on ripe fruit and honey, whose sweetness stands up to the Aperol.
