The range counts twelve cuvées. Dry, medium-dry, tributes, signature, cask finishes, ice cider. Each cuvée has a distinct profile. None is interchangeable with another.

The organising logic is simple: four families. The classics are the accessible entry point. The tributes tell the family saga bottle by bottle. The signature cuvées explore specific techniques. The cask finishes and rarities are made for particular occasions.

The classics

Le Brut and Le Demi-sec

Two ciders fermented with the cellar's wild yeasts, no added sulfites, bottled in certified reusable glass. The entry point into the range.

  • Le Brut

Lively attack, dry, reinette apple, noble bitterness on the finish.

Pairs withAperitif, light meals, oysters, seafood.

  • Le Demi-sec

Round, honeyed, ripe apple, controlled sweetness with no added sugar.

Pairs withAperitif, Asian cuisine, mild cheeses, apple desserts.

If you're giving a bottle to someone who doesn't know the estate's ciders, start with Le Brut.

The tribute cuvées

Maurice, Jean-René, Abel, Claude

Four cuvées, four family names, four distinct profiles. Each pays tribute to a generation of the estate and carries its own character.

  • Cuvée Maurice

Extra-dry, taut, sharp and bitter varieties. Honest dryness.

Pairs withNeat tasting, aged cheeses, smoked fish.

  • Cuvée Jean-René

Dry cellaring cider, structured, polyphenols, complexity that develops in the cellar.

Pairs withWhite meats, cured meats, keep 2 to 4 years in the cellar.

  • Cuvée Abel

Perry, 18 months on the lees, extra-dry, elegant, long. The slowest cuvée in the range.

Pairs withCelebration aperitif, roast poultry, light desserts.

  • Cuvée Claude

Generous medium-dry, on sweet varieties. Round, ripe fruit, honey.

Pairs withSweet-and-savoury cuisine, desserts, creamy cheeses.

Maurice and Jean-René are for lovers of dry, wine-like ciders. Abel joins them on the perry side, taut and finely chiselled. Claude suits those looking for a more approachable profile.

The signature cuvées

L'Inattendue, L'Extralucidre, André, La Muance

Cuvées crafted by our cellar master. Controlled winemaking, wild-yeast fermentations followed closely. Each one explores a specific angle.

  • L'Inattendue

Vintage-dated dry cellaring cider, floral, hawthorn, acidic tension, salinity on the finish.

Pairs withTasting, shellfish, fish in a light sauce, vegetable-forward cuisine.

  • L'Extralucidre

Premium, vintage 2020. Deep gold, dried fruit, honey, subtle oxidative notes, length.

Pairs withSpecial occasions, comparative tastings, keeps 5 years.

  • André

Perry Pet'Nat'. Light, naturally sparkling, fresh pear, white blossom, dry finish.

Pairs withSummer aperitif, Thai cuisine, fresh goat's cheese.

  • La Muance

Still, zero-sugar apple wine. Orange-amber, soft tannins, an "orange wine" profile.

Pairs withThe table, world cuisine pairings, tastings with natural wine lovers.

If you already know the tribute cuvées and want to explore, start with L'Inattendue or André. L'Extralucidre and La Muance are for those who want to step outside cider's usual codes.

The cask finishes and rarities

Astérocidre, Islay, Zéro Absolu

Limited production, extreme profiles. These three cuvées are made for comparative tastings, original gifts or exceptional moments.

  • Astérocidre

Finished in the estate's own Calvados casks. Baked apple, vanilla, toasted oak, a warming length.

Pairs withDigestif, dark chocolate pairings, cigars, side-by-side tasting with Calvados.

  • Islay

Finished in Islay peated whisky casks. Smoky, briny, maritime notes, the apple in the background.

Pairs withPeated whisky lovers, smoked fish, oysters, themed tastings.

  • Zéro Absolu

Ice cider, 50cl. The estate's own cider, concentrated by cold. Deep gold, candied apple, honey, noble sweetness. €35.

Pairs withFoie gras, rich desserts, milk chocolate, tasting at the end of a meal.

Astérocidre and Islay work well side by side: one against a young Calvados, the other against a peated whisky. Zéro Absolu is served chilled (6 to 8°C) in a dessert glass.
